It is not a CAN simulator and does not actively generate CAN signal without any OBD device plugged in. You can do CAN sniffing if there is a device with a OBD splitter cable.

The Molex VCC pin is 5V and can be switched on/off by a ESP32 GPIO (check FreematicsBase.h).

Default baudrate is defined in FreematicsPlus.h of the library. It is also possible to specify GPS baudrate by passing it as first argument of gpsInit().

Currently Bluetooth is not brought up in the code of datalogger. You can use Arduino BLE library and example sketches to test.
